Ingredients
- 4 medium apples (such as Honeycrisp or Fuji)
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts or pecans
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon black pepper
- 1 tablespoon fresh thyme leaves (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Core the apples, leaving the bottoms intact, and place them in a baking dish.
- In a small bowl, mix feta cheese, chopped nuts, black pepper, and thyme if using.
- Stuff each apple with the feta mixture.
- Drizzle honey and olive oil over the apples, then sprinkle lightly with cinnamon.
- Add 2–3 tablespoons of water to the bottom of the baking dish.
- Bake for 25–30 minutes until apples are tender but not collapsing.
- Serve warm, spooning any pan juices over the top.
Notes
- Choose firm apples so they hold their shape while baking.
- For extra sweetness, add a few raisins to the filling.
