Ingredients
- For the Crust:
- 6 sheets phyllo dough, thawed
- 1/4 cup unsalted butter, melted
- 3/4 cup finely chopped pistachios
- 2 tablespoons granulated sugar
- For the Cheesecake Filling:
- 16 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup pistachio paste
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- For the Honey Syrup:
- 1/2 cup honey
- 2 tablespoons water
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- Extra chopped pistachios for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- Layer phyllo sheets in the pan, brushing each sheet lightly with melted butter and slightly crumpling for texture.
- Mix chopped pistachios with 2 tablespoons sugar and sprinkle evenly over the phyllo base.
- Bake crust for 10 minutes until lightly golden. Remove and let cool slightly.
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing just until combined.
- Blend in pistachio paste, sour cream, vanilla extract, and salt until smooth.
- Pour filling over prepared crust and smooth the top.
- Bake for 45–55 minutes, until the center is slightly set but still slightly jiggly.
- Turn off oven, crack the door open, and let cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours or overnight until fully set.
- For the syrup, heat honey, water, lemon juice, and cinnamon in a small saucepan until slightly thickened. Cool slightly.
- Drizzle honey syrup over chilled cheesecake and garnish with chopped pistachios before serving.
