Description

A moist and tender banana walnut cream cake layered with fluffy whipped cream and crunchy walnuts, perfect for celebrations or an indulgent dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for cream)


Instructions

  1. Preheat oven to 180°C (350°F) and grease a round cake pan.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix mashed bananas, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined.
  5. Fold in chopped walnuts.
  6. Pour batter into prepared pan and bake for 35–40 minutes until a toothpick comes out clean.
  7. Allow cake to cool completely.
  8. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  9. Spread whipped cream evenly over the cooled cake.
  10. Garnish with extra walnuts if desired and serve.

Notes

  • Use very ripe bananas for maximum flavor.
  • The cake can be baked a day ahead and chilled before frosting.
  • Lightly toast walnuts for enhanced nuttiness.
