Description
A moist and tender banana walnut cream cake layered with fluffy whipped cream and crunchy walnuts, perfect for celebrations or an indulgent dessert.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract (for cream)
Instructions
- Preheat oven to 180°C (350°F) and grease a round cake pan.
- In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix mashed bananas, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Fold in chopped walnuts.
- Pour batter into prepared pan and bake for 35–40 minutes until a toothpick comes out clean.
- Allow cake to cool completely.
- Whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Spread whipped cream evenly over the cooled cake.
- Garnish with extra walnuts if desired and serve.
Notes
- Use very ripe bananas for maximum flavor.
- The cake can be baked a day ahead and chilled before frosting.
- Lightly toast walnuts for enhanced nuttiness.
