Description
Bavarian Cream and Berries is an elegant, silky custard-based dessert lightened with whipped cream and set with gelatin, then topped with fresh mixed berries. It’s a smooth, creamy treat balanced with bright, juicy fruit.
Ingredients
- 1 cup whole milk
- 1 cup heavy whipping cream (divided)
- 3 large egg yolks
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1 1/2 teaspoons unflavored gelatin
- 2 tablespoons cold water
- 1 cup fresh strawberries, sliced
- 1/2 cup fresh blueberries
- 1/2 cup fresh raspberries
- 1 tablespoon powdered sugar (optional, for berries)
Instructions
- In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes.
- In a saucepan over medium heat, warm the milk until just steaming (do not boil).
- In a separate bowl, whisk egg yolks and granulated sugar until pale and slightly thickened.
- Slowly pour the warm milk into the egg mixture while whisking continuously.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
- Remove from heat and stir in the bloomed gelatin until fully dissolved. Add vanilla extract.
- Allow the custard to cool to room temperature, stirring occasionally.
- Whip the heavy cream until soft peaks form, then gently fold into the cooled custard mixture.
- Pour into serving glasses or molds and refrigerate for at least 4 hours, or until set.
- Top with fresh berries (tossed with powdered sugar if desired) before serving.
Notes
- Do not let the custard boil, as it may curdle.
- Ensure the custard cools before folding in whipped cream to maintain a light texture.
- The dessert can be made a day in advance and kept refrigerated.
- For easy unmolding, lightly grease molds before filling.
