Description

Bavarian Cream and Berries is an elegant, silky custard-based dessert lightened with whipped cream and set with gelatin, then topped with fresh mixed berries. It’s a smooth, creamy treat balanced with bright, juicy fruit.


Ingredients

  • 1 cup whole milk
  • 1 cup heavy whipping cream (divided)
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons unflavored gelatin
  • 2 tablespoons cold water
  • 1 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1 tablespoon powdered sugar (optional, for berries)


Instructions

  1. In a small bowl, sprinkle gelatin over cold water and let bloom for 5 minutes.
  2. In a saucepan over medium heat, warm the milk until just steaming (do not boil).
  3. In a separate bowl, whisk egg yolks and granulated sugar until pale and slightly thickened.
  4. Slowly pour the warm milk into the egg mixture while whisking continuously.
  5. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  6. Remove from heat and stir in the bloomed gelatin until fully dissolved. Add vanilla extract.
  7. Allow the custard to cool to room temperature, stirring occasionally.
  8. Whip the heavy cream until soft peaks form, then gently fold into the cooled custard mixture.
  9. Pour into serving glasses or molds and refrigerate for at least 4 hours, or until set.
  10. Top with fresh berries (tossed with powdered sugar if desired) before serving.

Notes

  • Do not let the custard boil, as it may curdle.
  • Ensure the custard cools before folding in whipped cream to maintain a light texture.
  • The dessert can be made a day in advance and kept refrigerated.
  • For easy unmolding, lightly grease molds before filling.
