Description
A hearty beef enchilada casserole layered with seasoned ground beef, tortillas, enchilada sauce, and melted cheese, baked until bubbly and comforting.
Ingredients
- 500 g ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups red enchilada sauce
- 8 corn tortillas, cut into strips
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella or Monterey Jack cheese
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt, to taste
- Black pepper, to taste
- Chopped cilantro, for garnish (optional)
Instructions
- Preheat oven to 190°C (375°F) and grease a casserole dish.
- Heat olive oil in a skillet over medium heat.
- Add onion and sauté until soft, about 3–4 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it apart.
- Season with cumin, chili powder, paprika, salt, and black pepper.
- Stir in 1 cup of enchilada sauce and simmer for 3 minutes.
- Spread a thin layer of enchilada sauce in the casserole dish.
- Layer tortillas, beef mixture, and cheeses; repeat layers.
- Finish with remaining enchilada sauce and cheese on top.
- Cover with foil and bake for 25 minutes.
- Uncover and bake for another 10 minutes until cheese is melted and bubbly.
- Garnish with cilantro and serve hot.
Notes
- You can add black beans or corn for extra texture.
- Let the casserole rest for 10 minutes before slicing.
- Serve with sour cream or guacamole if desired.
