Description

A hearty beef enchilada casserole layered with seasoned ground beef, tortillas, enchilada sauce, and melted cheese, baked until bubbly and comforting.


Ingredients

  • 500 g ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups red enchilada sauce
  • 8 corn tortillas, cut into strips
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • Chopped cilantro, for garnish (optional)


Instructions

  1. Preheat oven to 190°C (375°F) and grease a casserole dish.
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and sauté until soft, about 3–4 minutes.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add ground beef and cook until browned, breaking it apart.
  6. Season with cumin, chili powder, paprika, salt, and black pepper.
  7. Stir in 1 cup of enchilada sauce and simmer for 3 minutes.
  8. Spread a thin layer of enchilada sauce in the casserole dish.
  9. Layer tortillas, beef mixture, and cheeses; repeat layers.
  10. Finish with remaining enchilada sauce and cheese on top.
  11. Cover with foil and bake for 25 minutes.
  12. Uncover and bake for another 10 minutes until cheese is melted and bubbly.
  13. Garnish with cilantro and serve hot.

Notes

  • You can add black beans or corn for extra texture.
  • Let the casserole rest for 10 minutes before slicing.
  • Serve with sour cream or guacamole if desired.
