Description
Berry Cream Pastry Cake is a light and elegant dessert made with flaky puff pastry layers filled with sweet whipped cream and fresh mixed berries, perfect for celebrations.
Ingredients
- 2 sheets puff pastry, thawed
- 1 1/2 cups heavy whipping cream
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 2 tbsp granulated sugar (optional, for macerating berries)
- Powdered sugar for dusting
Instructions
- Preheat oven to 200°C (400°F).
- Place puff pastry sheets on a baking tray lined with parchment paper.
- Prick pastry lightly with a fork to prevent excessive puffing.
- Bake for 15–18 minutes until golden and crisp. Cool completely.
- In a bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- If desired, toss berries with granulated sugar and let sit 10 minutes.
- Place one pastry sheet on a serving plate.
- Spread half of the whipped cream evenly over pastry.
- Top with half of the berries.
- Place second pastry sheet on top and repeat layers.
- Dust with powdered sugar before serving.
- Chill 30 minutes before slicing for easier serving.
