Description

Berry Cream Pastry Cake is a light and elegant dessert made with flaky puff pastry layers filled with sweet whipped cream and fresh mixed berries, perfect for celebrations.


Ingredients

  • 2 sheets puff pastry, thawed
  • 1 1/2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 2 tbsp granulated sugar (optional, for macerating berries)
  • Powdered sugar for dusting


Instructions

  1. Preheat oven to 200°C (400°F).
  2. Place puff pastry sheets on a baking tray lined with parchment paper.
  3. Prick pastry lightly with a fork to prevent excessive puffing.
  4. Bake for 15–18 minutes until golden and crisp. Cool completely.
  5. In a bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  6. If desired, toss berries with granulated sugar and let sit 10 minutes.
  7. Place one pastry sheet on a serving plate.
  8. Spread half of the whipped cream evenly over pastry.
  9. Top with half of the berries.
  10. Place second pastry sheet on top and repeat layers.
  11. Dust with powdered sugar before serving.
  12. Chill 30 minutes before slicing for easier serving.
