Description

Buffalo Chicken Mozzarella Sticks are crispy, golden appetizers stuffed with shredded buffalo chicken and gooey mozzarella cheese, coated in seasoned breadcrumbs and fried to perfection.

Ingredients

  • 2 cups cooked chicken, finely shredded
  • 1/3 cup buffalo sauce
  • 8 mozzarella string cheese sticks
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups seasoned breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Vegetable oil for frying
  • Ranch or blue cheese dressing for dipping

Instructions

  1. In a bowl, mix shredded chicken with buffalo sauce until evenly coated.
  2. Carefully split each mozzarella stick lengthwise without cutting all the way through.
  3. Spoon buffalo chicken mixture into each stick and press closed.
  4. Place stuffed sticks in the freezer for at least 30 minutes to firm up.
  5. Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with garlic powder and paprika.
  6. Coat each frozen stick in flour, dip in egg, then roll in breadcrumbs. Repeat egg and breadcrumb coating for extra crispiness.
  7. Heat oil in a deep skillet to 350°F (175°C).
  8. Fry sticks in batches for 1–2 minutes until golden brown.
  9. Remove and drain on paper towels. Serve immediately with ranch or blue cheese dressing.

Notes

  • Freezing is essential to prevent cheese from leaking while frying.
  • For a lighter version, air fry at 390°F for 6–8 minutes.
  • Adjust buffalo sauce to your preferred spice level.
  • Serve with celery sticks for a classic pairing.
