Description
A rich and comforting seafood pie loaded with tender shrimp and fish in a creamy sauce, topped with a golden Cheddar Bay–style biscuit crust for a hearty coastal-inspired meal.
Ingredients
- 1 lb mixed seafood (shrimp, white fish, scallops), chopped
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tsp Old Bay seasoning
- 1 cup frozen peas and carrots
- 1 package Cheddar Bay biscuit mix
- 2/3 cup milk (for biscuit mix)
- 2 tbsp melted butter (for topping)
- 1/2 tsp garlic powder (for topping)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Melt butter in a skillet over medium heat and sauté onion and garlic until soft.
- Stir in flour and cook for 1 minute.
- Gradually whisk in milk and cream until smooth and thickened.
- Add cheddar cheese, salt, pepper, paprika, and Old Bay seasoning.
- Fold in seafood and frozen vegetables and cook for 3–4 minutes.
- Transfer mixture to the prepared baking dish.
- Prepare biscuit mix with milk according to package instructions.
- Spoon biscuit dough evenly over the seafood filling.
- Bake for 25–30 minutes until biscuits are golden and filling is bubbly.
- Mix melted butter with garlic powder and brush over biscuits.
- Serve hot.
Notes
- Use fresh or frozen seafood, fully thawed.
- Do not overcook seafood before baking.
- Serve with a simple green salad for balance.
