Ingredients

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1 cup whole milk
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt (for dumplings)
  • 3/4 cup milk (for dumplings)
  • 2 tbsp melted butter (for dumplings)


Instructions

  1. In a large pot, heat butter and olive oil over medium heat.
  2. Add onion, carrots, and celery; cook for 5–7 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Add shredded chicken, salt, pepper, thyme, and parsley. Reduce heat and simmer for 10 minutes.
  6. Stir in 1 cup milk and return to a gentle simmer.
  7. In a bowl, mix flour, baking powder, and salt for the dumplings.
  8. Add milk and melted butter to the dumpling mixture and stir until just combined.
  9. Drop spoonfuls of dumpling dough into the simmering soup.
  10. Cover and cook for 15 minutes without lifting the lid.
  11. Uncover and cook an additional 5 minutes until dumplings are cooked through.
  12. Serve hot.

Notes

  • Do not stir while dumplings cook to keep them fluffy.
  • Rotisserie chicken works well for convenience.
  • Add peas or corn for extra vegetables.
