Description

A classic comfort dish featuring tender chicken simmered in a rich, creamy broth with soft, fluffy dumplings cooked right on top.


Ingredients

  • 1 lb (450 g) boneless, skinless chicken thighs or breasts
  • 6 cups chicken broth
  • 2 tbsp unsalted butter
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 cup whole milk
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt (for dumplings)
  • 2 tbsp butter, melted (for dumplings)
  • 3/4 cup milk (for dumplings)


Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onion, carrots, celery, and garlic; sauté until softened.
  3. Add chicken, chicken broth, salt, pepper, and thyme.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is cooked.
  5. Remove chicken, shred it, and return it to the pot.
  6. Stir in 1 cup milk and bring back to a gentle simmer.
  7. In a bowl, mix flour, baking powder, and salt.
  8. Add melted butter and milk to form a soft dough.
  9. Drop spoonfuls of dumpling dough onto the simmering soup.
  10. Cover and cook for 15 minutes without lifting the lid.
  11. Serve hot.

Notes

  • Do not stir once dumplings are added.
  • Use chicken thighs for extra tenderness.
  • Leftovers thicken as they cool; add broth when reheating.
