Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup cooked rice or quinoa
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup corn (fresh or canned)
- 1/4 red onion, thinly sliced
- 2 tbsp olive oil
- Juice of 1 lime
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp chopped fresh cilantro (optional)
Instructions
- Season chicken with garlic powder, paprika, salt, and pepper.
- Heat a skillet or grill pan over medium heat with 1 tablespoon olive oil.
- Cook chicken for 5-7 minutes per side until fully cooked. Let rest, then slice.
- In a bowl, combine cooked rice or quinoa as the base.
- Add sliced chicken, avocado, cherry tomatoes, cucumber, corn, and red onion.
- Drizzle remaining olive oil and lime juice over the bowl.
- Garnish with chopped cilantro if desired.
- Toss lightly or serve as is.
