Ingredients

  • 1 lb (450 g) boneless skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white or brown rice
  • 1 cup cooked black beans or pinto beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes or salsa
  • 1/2 cup shredded cheddar or Mexican-blend cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving


Instructions

  1. In a bowl, season chicken with chili powder, cumin, paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook chicken for 6–8 minutes until browned and fully cooked.
  3. Warm the cooked rice and beans separately.
  4. Assemble bowls by adding a base of rice, followed by beans, chicken, corn, and tomatoes or salsa.
  5. Top with shredded cheese, fresh cilantro, and a squeeze of lime juice.
  6. Serve immediately and customize with additional toppings if desired.
