Description

Chocolate Covered Strawberry Cake is a decadent layered dessert featuring moist chocolate cake, fresh strawberries, and rich chocolate ganache or buttercream, inspired by the classic chocolate-dipped strawberry treat.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee or hot water
  • 2 cups fresh strawberries, sliced
  • For the Chocolate Frosting:
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • For the Ganache (optional):
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Beat until smooth.
  4. Slowly stir in hot coffee or water until batter is well combined (batter will be thin).
  5. Divide batter evenly between pans and bake for 30–35 minutes, until a toothpick inserted comes out clean. Cool completely.
  6. For frosting, beat butter until creamy. Add powdered sugar and cocoa powder gradually.
  7. Mix in heavy cream and vanilla until smooth and fluffy.
  8. Place one cake layer on a serving plate, spread frosting on top, and layer with sliced strawberries.
  9. Add second cake layer and frost entire cake.
  10. For ganache, heat cream until steaming and pour over chocolate chips. Let sit 2 minutes, then stir until smooth. Drizzle over cake.
  11. Garnish with whole strawberries and chill slightly before serving.

Notes

  • Use fresh, dry strawberries to prevent excess moisture.
  • Chill cake before slicing for cleaner layers.
  • Store refrigerated due to fresh fruit.
  • Add strawberry jam between layers for extra flavor.
