Chocolate Covered Strawberry Cake is a decadent layered dessert featuring moist chocolate cake, fresh strawberries, and rich chocolate ganache or buttercream, inspired by the classic chocolate-dipped strawberry treat.
Ingredients
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot coffee or hot water
- 2 cups fresh strawberries, sliced
- For the Chocolate Frosting:
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- For the Ganache (optional):
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Beat until smooth.
- Slowly stir in hot coffee or water until batter is well combined (batter will be thin).
- Divide batter evenly between pans and bake for 30–35 minutes, until a toothpick inserted comes out clean. Cool completely.
- For frosting, beat butter until creamy. Add powdered sugar and cocoa powder gradually.
- Mix in heavy cream and vanilla until smooth and fluffy.
- Place one cake layer on a serving plate, spread frosting on top, and layer with sliced strawberries.
- Add second cake layer and frost entire cake.
- For ganache, heat cream until steaming and pour over chocolate chips. Let sit 2 minutes, then stir until smooth. Drizzle over cake.
- Garnish with whole strawberries and chill slightly before serving.
