Description
Cinnamon Roll Honeybun Cheesecake is a rich and creamy dessert featuring swirls of cinnamon sugar throughout a smooth cheesecake filling, baked on a buttery crust and topped with sweet glaze.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup brown sugar
- 1 1/2 tbsp ground cinnamon
- 1/4 cup honey
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp milk (for glaze)
Instructions
- Preheat oven to 165°C (325°F) and grease a 9-inch springform pan.
- Mix graham cracker crumbs with melted butter and press firmly into the bottom of the pan.
- Bake crust for 8–10 minutes, then cool.
- Beat cream cheese and granulated sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Blend in vanilla extract and sour cream until smooth.
- In a small bowl, mix brown sugar and cinnamon.
- Pour half of cheesecake batter over crust.
- Sprinkle half of cinnamon sugar mixture and drizzle honey over batter.
- Add remaining batter and top with remaining cinnamon sugar.
- Swirl gently with a knife to create a marbled effect.
- Bake for 55–65 minutes until center is slightly set.
- Turn off oven and let cheesecake cool inside with door slightly open.
- Chill for at least 4 hours or overnight.
- Whisk powdered sugar and milk to make glaze and drizzle before serving.

- Do not overmix to prevent cracks.
- Chill thoroughly for clean slices.
- Use a water bath for extra creamy texture.
