Description

A classic creamy coleslaw made with crisp cabbage and carrots tossed in a tangy, slightly sweet dressing, perfect as a refreshing side dish.

Ingredients

  • 4 cups green cabbage, finely shredded
  • 1 cup purple cabbage, finely shredded
  • 1 cup carrots, grated
  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice (optional)

Instructions

  1. In a large bowl, combine green cabbage, purple cabbage, and grated carrots.
  2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, pepper, and lemon juice.
  3. Pour the dressing over the cabbage mixture.
  4. Toss well until evenly coated.
  5. Cover and refrigerate for at least 30 minutes before serving.
  6. Stir again just before serving.

Notes

  • For a lighter version, use half mayonnaise and half Greek yogurt.
  • Adjust sugar and vinegar to taste.
