Description
A bold and creamy party appetizer that combines zesty cowboy caviar flavors with jalapeño popper–style cream cheese, shaped into a shareable cheese log.
Ingredients
- 8 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- 1/4 cup black beans, rinsed and drained
- 1/4 cup corn kernels (fresh or canned, drained)
- 2 tbsp diced red onion
- 1 small jalapeño, finely diced (seeds removed for less heat)
- 2 tbsp diced red bell pepper
- 1 tbsp chopped fresh cilantro
- 1 tbsp lime juice
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
Instructions
- In a mixing bowl, beat cream cheese until smooth.
- Stir in cheddar and Monterey Jack cheeses.
- Add black beans, corn, red onion, jalapeño, red bell pepper, and cilantro.
- Mix in lime juice, garlic powder, smoked paprika, and salt until well combined.
- Spoon mixture onto plastic wrap and shape into a log.
- Wrap tightly and refrigerate for at least 2 hours to firm up.
- Unwrap, place on a serving platter, and serve chilled or slightly softened.
Notes
- Serve with tortilla chips, crackers, or veggie sticks.
- Can be made up to 24 hours in advance.
