Creamy Cajun Chicken Soup is a rich and comforting soup made with tender chicken, vegetables, bold Cajun spices, and a velvety cream-based broth.
Ingredients
- 2 tbsp olive oil
- 1 lb (450 g) boneless skinless chicken breast, diced
- 1 tsp Cajun seasoning
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup celery, diced
- 1/2 cup carrots, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup cream cheese, softened
- 1/2 cup corn kernels
- 1 tbsp chopped parsley (optional)
- Salt to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken with Cajun seasoning, paprika, and black pepper.
- Add chicken to pot and cook until lightly browned. Remove and set aside.
- In the same pot, sauté onion, garlic, celery, and carrots until softened.
- Pour in chicken broth and bring to a simmer.
- Return chicken to the pot and cook for 10 minutes.
- Stir in heavy cream and cream cheese, mixing until smooth.
- Add corn and simmer 5 more minutes until thickened.
- Adjust salt to taste.
- Garnish with chopped parsley and serve warm.
