Description

Creamy Cajun Chicken Soup is a rich and comforting soup made with tender chicken, vegetables, bold Cajun spices, and a velvety cream-based broth.


Ingredients

  • 2 tbsp olive oil
  • 1 lb (450 g) boneless skinless chicken breast, diced
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup celery, diced
  • 1/2 cup carrots, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1/2 cup corn kernels
  • 1 tbsp chopped parsley (optional)
  • Salt to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with Cajun seasoning, paprika, and black pepper.
  3. Add chicken to pot and cook until lightly browned. Remove and set aside.
  4. In the same pot, sauté onion, garlic, celery, and carrots until softened.
  5. Pour in chicken broth and bring to a simmer.
  6. Return chicken to the pot and cook for 10 minutes.
  7. Stir in heavy cream and cream cheese, mixing until smooth.
  8. Add corn and simmer 5 more minutes until thickened.
  9. Adjust salt to taste.
  10. Garnish with chopped parsley and serve warm.

  • Use rotisserie chicken for quicker preparation.
