Description
A rich and creamy Tuscan-style pasta made with tender chicken, sun-dried tomatoes, garlic, and spinach tossed in a luscious Parmesan cream sauce.
Ingredients
- 12 oz penne or fettuccine pasta
- 1 lb (450 g) boneless, skinless chicken breast, sliced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper and cook until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté until fragrant.
- Add sun-dried tomatoes and cook for 1 minute.
- Pour in chicken broth and heavy cream; bring to a gentle simmer.
- Stir in Parmesan cheese and Italian seasoning until sauce thickens.
- Add spinach and cook until wilted.
- Return chicken and pasta to the skillet and toss to coat evenly.
- Adjust seasoning and serve hot.
Notes
- Use freshly grated Parmesan for best texture.
- Add mushrooms for extra flavor.
- Sauce thickens as it cools; add pasta water if needed.
