Description

A rich and creamy Tuscan-style pasta made with tender chicken, sun-dried tomatoes, garlic, and spinach tossed in a luscious Parmesan cream sauce.


Ingredients

  • 12 oz penne or fettuccine pasta
  • 1 lb (450 g) boneless, skinless chicken breast, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)


Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken with salt and pepper and cook until golden and cooked through. Remove and set aside.
  4. In the same skillet, add garlic and sauté until fragrant.
  5. Add sun-dried tomatoes and cook for 1 minute.
  6. Pour in chicken broth and heavy cream; bring to a gentle simmer.
  7. Stir in Parmesan cheese and Italian seasoning until sauce thickens.
  8. Add spinach and cook until wilted.
  9. Return chicken and pasta to the skillet and toss to coat evenly.
  10. Adjust seasoning and serve hot.

  • Use freshly grated Parmesan for best texture.
  • Add mushrooms for extra flavor.
  • Sauce thickens as it cools; add pasta water if needed.
