Description
A rich and comforting Irish-style potato soup made with tender potatoes simmered in broth and finished with cream for a smooth, cozy texture.
Ingredients
- 2 lbs (900 g) potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 tbsp unsalted butter
- 4 cups vegetable broth
- 1 cup heavy cream
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 2 tbsp fresh chives or green onions, chopped
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic and sauté until soft and fragrant.
- Add diced potatoes, vegetable broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 18–20 minutes until potatoes are tender.
- Use an immersion blender to blend soup until smooth, or blend in batches.
- Stir in heavy cream and simmer for 5 minutes.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with fresh chives.
Notes
- For a chunkier soup, blend only half of the potatoes.
- Milk can be substituted for cream for a lighter version.
- Serve with crusty bread for a complete meal.
