Description

A rich and comforting Irish-style potato soup made with tender potatoes simmered in broth and finished with cream for a smooth, cozy texture.


Ingredients

  • 2 lbs (900 g) potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 2 tbsp fresh chives or green onions, chopped


Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic and sauté until soft and fragrant.
  3. Add diced potatoes, vegetable broth, salt, pepper, and thyme.
  4. Bring to a boil, then reduce heat and simmer for 18–20 minutes until potatoes are tender.
  5. Use an immersion blender to blend soup until smooth, or blend in batches.
  6. Stir in heavy cream and simmer for 5 minutes.
  7. Taste and adjust seasoning as needed.
  8. Serve hot, garnished with fresh chives.

Notes

  • For a chunkier soup, blend only half of the potatoes.
  • Milk can be substituted for cream for a lighter version.
  • Serve with crusty bread for a complete meal.
