Ingredients

  • 1 cup dry orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  4. Add dry orzo and toast lightly for 1–2 minutes.
  5. Pour in broth and bring to a gentle simmer.
  6. Cook for 8–10 minutes, stirring occasionally, until orzo is tender and liquid mostly absorbed.
  7. Reduce heat and stir in heavy cream and Parmesan cheese.
  8. Add chopped spinach and cook until wilted.
  9. Season with salt and pepper. Serve warm.
