Ingredients
- 1 cup dry orzo pasta
- 2 tablespoons olive oil

- 1/4 teaspoon red pepper flakes (optional)
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes.
- Add dry orzo and toast lightly for 1–2 minutes.
- Pour in broth and bring to a gentle simmer.
- Cook for 8–10 minutes, stirring occasionally, until orzo is tender and liquid mostly absorbed.
- Reduce heat and stir in heavy cream and Parmesan cheese.
- Add chopped spinach and cook until wilted.
- Season with salt and pepper. Serve warm.
