Description

A rich, creamy, and comforting slow-cooked soup made with tender potatoes, fresh broccoli, and sharp cheddar cheese, perfect for cozy meals with minimal effort.


Ingredients

  • 4 cups potatoes, peeled and diced
  • 2 cups broccoli florets, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Add potatoes, broccoli, onion, garlic, and vegetable broth to the crock pot.
  2. Cover and cook on low for 6–7 hours or on high for 3–4 hours until vegetables are tender.
  3. In a small saucepan, melt butter over medium heat.
  4. Whisk in flour and cook for 1 minute to form a roux.
  5. Slowly whisk in milk and cream until smooth and slightly thickened.
  6. Stir the mixture into the crock pot.
  7. Add shredded cheddar cheese, salt, and pepper.
  8. Stir well, cover, and cook for an additional 20–30 minutes until creamy.
  9. Blend partially with an immersion blender if a smoother texture is desired.
  10. Serve hot.

Notes

  • Use sharp cheddar for best flavor.
  • Soup thickens more as it cools.
  • Add cooked bacon as a topping if not keeping vegetarian.
