Description
A comforting and classic slow-cooked soup made with tender chicken, hearty noodles, and vegetables simmered in a flavorful broth, perfect for cozy meals or when feeling under the weather.
Ingredients
- 1 lb (450 g) boneless, skinless chicken breasts
- 8 cups chicken broth
- 2 cups egg noodles
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- 1 tsp salt
- 1 bay leaf
Instructions
- Add chicken breasts, carrots, celery, onion, and garlic to the crockpot.
- Pour in chicken broth and add thyme, parsley, bay leaf, salt, and pepper.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- Remove chicken, shred with two forks, and return to the crockpot.
- Add egg noodles, cover, and cook on high for 20–30 minutes until noodles are tender.
- Remove bay leaf, taste, and adjust seasoning if needed.
- Serve hot.
Notes
- Add noodles near the end to prevent them from becoming mushy.
- You can substitute egg noodles with pasta or rice.
- Soup can be frozen without noodles for best texture.
