Description

A comforting and classic slow-cooked soup made with tender chicken, hearty noodles, and vegetables simmered in a flavorful broth, perfect for cozy meals or when feeling under the weather.


Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 bay leaf


Instructions

  1. Add chicken breasts, carrots, celery, onion, and garlic to the crockpot.
  2. Pour in chicken broth and add thyme, parsley, bay leaf, salt, and pepper.
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  4. Remove chicken, shred with two forks, and return to the crockpot.
  5. Add egg noodles, cover, and cook on high for 20–30 minutes until noodles are tender.
  6. Remove bay leaf, taste, and adjust seasoning if needed.
  7. Serve hot.

Notes

  • Add noodles near the end to prevent them from becoming mushy.
  • You can substitute egg noodles with pasta or rice.
  • Soup can be frozen without noodles for best texture.
