Ingredients
- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon yellow mustard
- 2 tablespoons apple cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup celery, finely chopped
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely diced
- 1/4 cup shredded carrot
- 2 hard-boiled eggs, chopped (optional)
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Cook macaroni according to package instructions until al dente. Drain and rinse under cold water to cool completely.
- In a large bowl, whisk together mayonnaise, mustard, apple cider vinegar, sugar, salt, and pepper until smooth.
- Add cooled macaroni to the dressing and toss to coat evenly.
- Stir in celery, red bell pepper, red onion, shredded carrot, and chopped eggs if using.
- Cover and refrigerate for at least 1 hour to allow flavors to meld.
- Garnish with fresh parsley before serving if desired.
