Description
Dubai Chewy Cookie is a rich, soft, and ultra-chewy cookie loaded with chocolate chips and often filled with pistachio cream or Nutella for a decadent Middle Eastern-inspired twist.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup chopped pistachios
- 1/2 cup pistachio cream or chocolate hazelnut spread (for filling, optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, mix melted butter, brown sugar, and granulated sugar until smooth.
- Add eggs and vanilla extract; mix until fully combined.
- Gradually fold dry ingredients into wet ingredients until just combined.
- Stir in chocolate chips and chopped pistachios.
- If using filling, scoop dough, flatten slightly, place 1 teaspoon pistachio cream in the center, and seal with more dough.
- Place dough balls onto prepared baking sheet, spacing 2 inches apart.
- Bake for 10–12 minutes until edges are golden but centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Do not overbake to maintain chewy texture.
- Chill dough for 30 minutes for thicker cookies.
- Sprinkle with flaky sea salt before baking for extra flavor.
- Store in an airtight container for up to 4 days.
