Description

Dubai Chewy Cookie is a rich, soft, and ultra-chewy cookie loaded with chocolate chips and often filled with pistachio cream or Nutella for a decadent Middle Eastern-inspired twist.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup chopped pistachios
  • 1/2 cup pistachio cream or chocolate hazelnut spread (for filling, optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, mix melted butter, brown sugar, and granulated sugar until smooth.
  4. Add eggs and vanilla extract; mix until fully combined.
  5. Gradually fold dry ingredients into wet ingredients until just combined.
  6. Stir in chocolate chips and chopped pistachios.
  7. If using filling, scoop dough, flatten slightly, place 1 teaspoon pistachio cream in the center, and seal with more dough.
  8. Place dough balls onto prepared baking sheet, spacing 2 inches apart.
  9. Bake for 10–12 minutes until edges are golden but centers remain soft.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Sprinkle with flaky sea salt before baking for extra flavor.
