Description

Farfalle Pasta with Spinach, Mushrooms, and Caramelized Onions is a comforting vegetarian dish featuring bow-tie pasta tossed with sweet caramelized onions, sautéed mushrooms, fresh spinach, and a light garlic-Parmesan sauce.


Ingredients

  • 12 oz farfalle pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 large onions, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Cook farfalle pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.
  2. In a large skillet, heat olive oil and butter over medium-low heat. Add sliced onions and cook slowly for 20–25 minutes, stirring occasionally, until caramelized and golden brown.
  3. Add mushrooms and cook for 5–7 minutes until softened and lightly browned.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add spinach and cook until wilted.
  6. Pour in vegetable broth and heavy cream, stirring to combine. Simmer for 2–3 minutes.
  7. Add cooked pasta to the skillet and toss to coat. Use reserved pasta water as needed to loosen the sauce.
  8. Stir in Parmesan cheese, salt, pepper, and red pepper flakes.
  9. Toss until creamy and well combined. Serve warm.
