Ingredients
- 12 oz farfalle pasta
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 large onions, thinly sliced
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1/2 cup vegetable broth
- 1/4 cup heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Cook farfalle pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain.
- In a large skillet, heat olive oil and butter over medium-low heat. Add sliced onions and cook slowly for 20–25 minutes, stirring occasionally, until caramelized and golden brown.
- Add mushrooms and cook for 5–7 minutes until softened and lightly browned.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add spinach and cook until wilted.
- Pour in vegetable broth and heavy cream, stirring to combine. Simmer for 2–3 minutes.
- Add cooked pasta to the skillet and toss to coat. Use reserved pasta water as needed to loosen the sauce.
- Stir in Parmesan cheese, salt, pepper, and red pepper flakes.
- Toss until creamy and well combined. Serve warm.
