Description
A bold and indulgent skillet meatloaf packed with smoked bacon, three kinds of melted cheese, and a sweet-spicy firecracker glaze, cooked until juicy and irresistible.
Ingredients
- 1 1/2 lb (700 g) ground beef
- 6 slices smoked bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded pepper jack cheese
- 3/4 cup breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 cup firecracker sauce (sweet chili sauce mixed with hot sauce)
- 1 tablespoon olive oil (for skillet)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, bacon, cheddar, mozzarella, pepper jack, breadcrumbs, eggs, milk, salt, pepper, garlic powder, and onion powder.
- Mix gently until just combined.
- Heat olive oil in an oven-safe skillet over medium heat.
- Shape meat mixture into a loaf and place in the skillet. Sear for 2–3 minutes per side.
- Brush the top generously with firecracker sauce.
- Transfer skillet to the oven and bake for 35–40 minutes, until internal temperature reaches 160°F (71°C).
- Remove from oven and let rest for 10 minutes before slicing.
Notes
- Adjust heat by using more or less hot sauce in the firecracker glaze.
- Do not overmix the meat to keep the meatloaf tender.
- Serve directly from the skillet for a rustic presentation.
