Description

A bold and indulgent skillet meatloaf packed with smoked bacon, three kinds of melted cheese, and a sweet-spicy firecracker glaze, cooked until juicy and irresistible.


Ingredients

  • 1 1/2 lb (700 g) ground beef
  • 6 slices smoked bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded pepper jack cheese
  • 3/4 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup firecracker sauce (sweet chili sauce mixed with hot sauce)
  • 1 tablespoon olive oil (for skillet)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, bacon, cheddar, mozzarella, pepper jack, breadcrumbs, eggs, milk, salt, pepper, garlic powder, and onion powder.
  3. Mix gently until just combined.
  4. Heat olive oil in an oven-safe skillet over medium heat.
  5. Shape meat mixture into a loaf and place in the skillet. Sear for 2–3 minutes per side.
  6. Brush the top generously with firecracker sauce.
  7. Transfer skillet to the oven and bake for 35–40 minutes, until internal temperature reaches 160°F (71°C).
  8. Remove from oven and let rest for 10 minutes before slicing.

Notes

  • Adjust heat by using more or less hot sauce in the firecracker glaze.
  • Do not overmix the meat to keep the meatloaf tender.
  • Serve directly from the skillet for a rustic presentation.
