Description
A light and fluffy fruit loaf cake filled with dried fruits and topped with a soft crumb, perfect for a snack, tea time, or dessert.
Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1 cup mixed dried fruit (raisins, cranberries, chopped dried apricots, etc.)
- 1/4 cup chopped walnuts or almonds (optional)
- 1 tbsp orange zest (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, followed by vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
- Fold in dried fruit, nuts, and orange zest, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–55 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Store in an airtight container for up to 3 days.
- Can be served with a dusting of powdered sugar or a light glaze.
- Substitute other dried fruits and nuts based on preference.
