Description

A light and fluffy fruit loaf cake filled with dried fruits and topped with a soft crumb, perfect for a snack, tea time, or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup mixed dried fruit (raisins, cranberries, chopped dried apricots, etc.)
  • 1/4 cup chopped walnuts or almonds (optional)
  • 1 tbsp orange zest (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
  6. Fold in dried fruit, nuts, and orange zest, if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–55 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
