Description
A rich and comforting fusion dish that combines the deep, caramelized flavors of classic French onion soup with creamy, cheesy macaroni and cheese, finished with gooey melted cheese on top.
Ingredients
- 2 tbsp unsalted butter
- 2 large yellow onions, thinly sliced
- 1 tsp sugar
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups beef or vegetable broth
- 1 cup whole milk
- 1 cup heavy cream
- 8 oz elbow macaroni
- 1 1/2 cups shredded Gruyère cheese
- 1 cup shredded sharp cheddar cheese
- 1/2 tsp dried thyme
- Salt, to taste
- Black pepper, to taste
- 1/2 cup shredded mozzarella or Swiss cheese (for topping)
Instructions
- Cook macaroni according to package instructions until al dente. Drain and set aside.
- In a large pot or skillet, melt butter over medium heat. Add sliced onions and sugar, cooking slowly for 20–25 minutes until deeply caramelized.
- Add minced garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over the onions and stir well. Cook for 1–2 minutes.
- Gradually whisk in broth, milk, and cream. Simmer for 5 minutes until slightly thickened.
- Add Gruyère and cheddar cheese, stirring until melted and smooth.
- Season with thyme, salt, and black pepper.
- Stir in the cooked macaroni until well coated.
- Transfer to an oven-safe dish, top with mozzarella or Swiss cheese, and broil for 3–5 minutes until bubbly and golden.
- Serve hot.
Notes
- Slowly caramelizing the onions is key to deep flavor.
- You can substitute vegetable broth for a fully vegetarian version.
- Add toasted breadcrumbs on top for extra crunch.
