Description

A rich and comforting fusion dish that combines the deep, caramelized flavors of classic French onion soup with creamy, cheesy macaroni and cheese, finished with gooey melted cheese on top.


Ingredients

  • 2 tbsp unsalted butter
  • 2 large yellow onions, thinly sliced
  • 1 tsp sugar
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups beef or vegetable broth
  • 1 cup whole milk
  • 1 cup heavy cream
  • 8 oz elbow macaroni
  • 1 1/2 cups shredded Gruyère cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 tsp dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup shredded mozzarella or Swiss cheese (for topping)


Instructions

  1. Cook macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large pot or skillet, melt butter over medium heat. Add sliced onions and sugar, cooking slowly for 20–25 minutes until deeply caramelized.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over the onions and stir well. Cook for 1–2 minutes.
  5. Gradually whisk in broth, milk, and cream. Simmer for 5 minutes until slightly thickened.
  6. Add Gruyère and cheddar cheese, stirring until melted and smooth.
  7. Season with thyme, salt, and black pepper.
  8. Stir in the cooked macaroni until well coated.
  9. Transfer to an oven-safe dish, top with mozzarella or Swiss cheese, and broil for 3–5 minutes until bubbly and golden.
  10. Serve hot.
