Description

Crispy fried calamari made with tender squid rings coated in a light seasoned batter and fried until golden, served hot with lemon and dipping sauce.

Ingredients

  • 500 g fresh calamari (squid), cleaned and sliced into rings
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1 cup cold sparkling water
  • Vegetable oil, for frying
  • Lemon wedges, for serving

Instructions

  1. Pat the calamari rings dry thoroughly with paper towels.
  2. In a bowl, mix flour, cornstarch, salt, black pepper, paprika, and garlic powder.
  3. Gradually whisk in cold sparkling water to form a light batter.
  4. Heat vegetable oil in a deep pan to 180°C (350°F).
  5. Dip calamari rings into the batter, letting excess drip off.
  6. Fry calamari in small batches for 2–3 minutes until golden and crispy.
  7. Remove and drain on paper towels.
  8. Serve immediately with lemon wedges and dipping sauce.

Notes

  • Do not overcrowd the pan to keep the calamari crispy.
