Ingredients

  • 300g shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • Juice of 1/2 lemon
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Season shrimp with salt, pepper, and paprika.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
  3. Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.
  4. In the same skillet, add remaining butter and sauté garlic until fragrant.
  5. Add asparagus and cook for 4-5 minutes until tender-crisp.
  6. Return shrimp to the skillet and toss with asparagus.
  7. Add lemon juice and red pepper flakes, then stir to combine.
  8. Cook for another 1-2 minutes until everything is heated through.
  9. Garnish with fresh parsley and serve immediately.

Notes

  • Do not overcook shrimp to keep them tender.
  • Add a splash of white vinegar or extra lemon for brightness.
  • Serve over rice, pasta, or enjoy on its own for a low-carb meal.
  • You can substitute asparagus with green beans or broccoli.
