Description

Creamy and flavorful Green Chile Chicken Enchiladas made with tender shredded chicken, tangy green chile sauce, and melted cheese wrapped in soft tortillas. A comforting Mexican-inspired dinner perfect for family meals.


Ingredients

  • 3 cups cooked shredded chicken
  • 1 can (10 oz) green enchilada sauce
  • 1 can (4 oz) diced green chiles
  • 1 cup sour cream
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • 8 small flour or corn tortillas
  • 1/2 cup diced onion
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil and sauté onion until soft.
  3. Stir in shredded chicken, diced green chiles, cumin, garlic powder, salt, and pepper.
  4. In a bowl, mix enchilada sauce with sour cream.
  5. Spread a thin layer of sauce mixture on the bottom of the baking dish.
  6. Fill each tortilla with chicken mixture and a sprinkle of cheese, then roll and place seam-side down in dish.
  7. Pour remaining sauce evenly over enchiladas.
  8. Top with remaining cheese.
  9. Bake for 20-25 minutes until bubbly and golden.
  10. Let rest 5 minutes before serving.

  • Use rotisserie chicken for convenience.
  • Warm tortillas slightly to prevent cracking.
  • Add jalapeños for extra heat.
