Ingredients
- 3 cups cooked shredded chicken
- 1 can (10 oz) green enchilada sauce
- 1 can (4 oz) diced green chiles
- 1 cup sour cream
- 2 cups shredded Monterey Jack or Mexican blend cheese
- 8 small flour or corn tortillas
- 1/2 cup diced onion
- 1 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet, heat olive oil and sauté onion until soft.
- Stir in shredded chicken, diced green chiles, cumin, garlic powder, salt, and pepper.
- In a bowl, mix enchilada sauce with sour cream.
- Spread a thin layer of sauce mixture on the bottom of the baking dish.
- Fill each tortilla with chicken mixture and a sprinkle of cheese, then roll and place seam-side down in dish.
- Pour remaining sauce evenly over enchiladas.
- Top with remaining cheese.
- Bake for 20-25 minutes until bubbly and golden.
- Let rest 5 minutes before serving.
Notes
- Use rotisserie chicken for convenience.
- Warm tortillas slightly to prevent cracking.
- Add jalapeños for extra heat.
- Store leftovers refrigerated for up to 3 days.
