Description

Hasselback Celery Root with Brie is an elegant vegetarian side dish featuring thinly sliced celery root roasted until tender, stuffed with creamy Brie cheese, and finished with herbs for a rich and savory flavor.


Ingredients

  • 1 large celery root (celeriac), peeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 4 oz Brie cheese, sliced
  • 2 cloves garlic, thinly sliced
  • 1 tablespoon melted butter
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Trim the bottom of the celery root so it sits flat.
  3. Using a sharp knife, make thin slices across the celery root, stopping just before cutting all the way through.
  4. Place the celery root on a baking dish.
  5. Brush with olive oil and season with salt, pepper, and thyme.
  6. Cover loosely with foil and roast for 40 minutes.
  7. Remove from oven and gently insert garlic slices and Brie between the cuts.
  8. Drizzle with melted butter and return to the oven uncovered.
  9. Roast for another 20–25 minutes until tender and cheese is melted.
  10. Garnish with fresh parsley and serve warm.

Notes

  • Use a wooden spoon on each side to prevent cutting through completely.
  • Camembert can be substituted for Brie.
  • Serve as a holiday side or vegetarian main.
