Description
Hasselback Celery Root with Brie is an elegant vegetarian side dish featuring thinly sliced celery root roasted until tender, stuffed with creamy Brie cheese, and finished with herbs for a rich and savory flavor.
Ingredients
- 1 large celery root (celeriac), peeled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme leaves
- 4 oz Brie cheese, sliced
- 2 cloves garlic, thinly sliced
- 1 tablespoon melted butter
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Trim the bottom of the celery root so it sits flat.
- Using a sharp knife, make thin slices across the celery root, stopping just before cutting all the way through.
- Place the celery root on a baking dish.
- Brush with olive oil and season with salt, pepper, and thyme.
- Cover loosely with foil and roast for 40 minutes.
- Remove from oven and gently insert garlic slices and Brie between the cuts.
- Drizzle with melted butter and return to the oven uncovered.
- Roast for another 20–25 minutes until tender and cheese is melted.
- Garnish with fresh parsley and serve warm.
Notes
- Use a wooden spoon on each side to prevent cutting through completely.
- Camembert can be substituted for Brie.
- Serve as a holiday side or vegetarian main.
