A light and creamy Hawaiian-inspired dessert made with sweet pineapple, coconut, and fluffy whipped topping for a refreshing tropical treat.
Ingredients
- 1 can (20 oz) crushed pineapple, drained
- 1 cup sweetened shredded coconut
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 cup cold milk
- 1 cup whipped topping
- 1/2 cup mini marshmallows
- 1/2 cup chopped macadamia nuts or pecans (optional)
Instructions
- In a large bowl, whisk together instant pudding mix and cold milk until thickened.
- Fold in drained crushed pineapple and shredded coconut.
- Add mini marshmallows and chopped nuts if using.
- Gently fold in whipped topping until fully combined and fluffy.
- Cover and refrigerate for at least 1 hour before serving.
- Serve chilled.
Notes
- Be sure pineapple is well drained to avoid excess liquid.
- Can be made a day ahead for best flavor.
