Sweet and smoky honey BBQ chicken served over fluffy rice, featuring tender chicken coated in a rich barbecue glaze for a simple and satisfying meal.


Ingredients

  • 2 cups cooked white rice
  • 1 1/2 pounds boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup barbecue sauce
  • 1/4 cup honey
  • 1 tablespoon soy sauce
  • 1/2 cup diced bell peppers (optional)
  • 2 tablespoons chopped green onions (for garnish)


Instructions

  1. Cook rice according to package instructions and set aside.
  2. Season diced chicken with salt, pepper, garlic powder, and smoked paprika.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 6–8 minutes until browned and fully cooked.
  4. In a small bowl, mix barbecue sauce, honey, and soy sauce.
  5. Pour the honey BBQ mixture over the cooked chicken. Stir and simmer for 3–5 minutes until the sauce thickens and coats the chicken evenly.
  6. Add diced bell peppers during the last 2 minutes of cooking if using.
  7. Serve honey BBQ chicken over warm rice and garnish with chopped green onions.
