Sweet and smoky honey BBQ chicken served over fluffy rice, featuring tender chicken coated in a rich barbecue glaze for a simple and satisfying meal.
Ingredients
- 2 cups cooked white rice
- 1 1/2 pounds boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 cup barbecue sauce
- 1/4 cup honey
- 1 tablespoon soy sauce
- 1/2 cup diced bell peppers (optional)
- 2 tablespoons chopped green onions (for garnish)
Instructions
- Cook rice according to package instructions and set aside.
- Season diced chicken with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook for 6–8 minutes until browned and fully cooked.
- In a small bowl, mix barbecue sauce, honey, and soy sauce.
- Pour the honey BBQ mixture over the cooked chicken. Stir and simmer for 3–5 minutes until the sauce thickens and coats the chicken evenly.
- Add diced bell peppers during the last 2 minutes of cooking if using.
- Serve honey BBQ chicken over warm rice and garnish with chopped green onions.
