Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 1/2 tsp ginger, minced or powdered
  • Salt and pepper to taste
  • 2 tbsp chopped green onions (for garnish)

Instructions

  1. Season chicken lightly with salt and pepper.
  2. Heat 1 tablespoon olive oil in a large pan or wok over medium-high heat.
  3. Add chicken and cook for 5-7 minutes until golden and cooked through. Remove and set aside.
  4. In the same pan, add remaining oil and sauté garlic and ginger until fragrant.
  5. Add mixed vegetables and stir fry for 3-5 minutes until tender-crisp.
  6. In a small bowl, mix honey, soy sauce, and oyster sauce.
  7. Return chicken to the pan and pour in the sauce.
  8. Stir well, then add the cornstarch slurry to thicken the sauce.
  9. Cook for 2-3 minutes until the sauce thickens and coats everything.
  10. Garnish with green onions and serve hot.

Notes

  • Serve over rice or noodles for a complete meal.
