Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups mixed vegetables (broccoli, bell peppers, carrots)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 cup honey
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
- 1/2 tsp ginger, minced or powdered
- Salt and pepper to taste
- 2 tbsp chopped green onions (for garnish)
Instructions
- Season chicken lightly with salt and pepper.
- Heat 1 tablespoon olive oil in a large pan or wok over medium-high heat.
- Add chicken and cook for 5-7 minutes until golden and cooked through. Remove and set aside.
- In the same pan, add remaining oil and sauté garlic and ginger until fragrant.
- Add mixed vegetables and stir fry for 3-5 minutes until tender-crisp.
- In a small bowl, mix honey, soy sauce, and oyster sauce.
- Return chicken to the pan and pour in the sauce.
- Stir well, then add the cornstarch slurry to thicken the sauce.
- Cook for 2-3 minutes until the sauce thickens and coats everything.
- Garnish with green onions and serve hot.
