Description
Tender baked salmon glazed with a sweet and tangy honey pineapple sauce, creating a tropical-inspired dish that’s flavorful, healthy, and easy to prepare.
Ingredients
- 4 salmon fillets (about 6 oz each)
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/4 cup pineapple juice
- 3 tbsp honey
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp grated fresh ginger
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tbsp fresh lime juice (optional)
- 2 tbsp chopped fresh parsley or cilantro (optional)
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- Arrange salmon fillets in the baking dish and season with salt and black pepper.
- In a small saucepan, combine pineapple juice, honey, soy sauce, garlic, ginger, and olive oil.
- Simmer over medium heat for 4–5 minutes until slightly thickened.
- Add pineapple chunks to the sauce and stir gently.
- Pour the honey pineapple sauce evenly over the salmon.
- Bake for 12–15 minutes until salmon flakes easily with a fork.
- Optional: Broil for 2 minutes for a caramelized top.
- Drizzle with lime juice and garnish with parsley or cilantro before serving.
Notes
- Do not overcook salmon to keep it moist.
- Serve with rice, quinoa, or steamed vegetables.
- Fresh pineapple adds the best flavor, but canned works well.
