Tender baked salmon glazed with a sweet and tangy honey pineapple sauce, creating a tropical-inspired dish that’s flavorful, healthy, and easy to prepare.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/4 cup pineapple juice
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp grated fresh ginger
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp fresh lime juice (optional)
  • 2 tbsp chopped fresh parsley or cilantro (optional)


Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Arrange salmon fillets in the baking dish and season with salt and black pepper.
  3. In a small saucepan, combine pineapple juice, honey, soy sauce, garlic, ginger, and olive oil.
  4. Simmer over medium heat for 4–5 minutes until slightly thickened.
  5. Add pineapple chunks to the sauce and stir gently.
  6. Pour the honey pineapple sauce evenly over the salmon.
  7. Bake for 12–15 minutes until salmon flakes easily with a fork.
  8. Optional: Broil for 2 minutes for a caramelized top.
  9. Drizzle with lime juice and garnish with parsley or cilantro before serving.

Notes

  • Do not overcook salmon to keep it moist.
  • Serve with rice, quinoa, or steamed vegetables.
  • Fresh pineapple adds the best flavor, but canned works well.
