Description

Classic Italian Chicken Cacciatore featuring tender chicken braised in a rustic tomato sauce with onions, bell peppers, garlic, herbs, and olives for a hearty, comforting meal.


Ingredients

  • 1 kg chicken thighs or drumsticks, skin-on
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1/2 cup tomato sauce
  • 1/2 cup chicken broth
  • 1/2 cup dry red wine (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/4 cup black or green olives, sliced
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Season chicken with salt and black pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Sear chicken on both sides until golden brown, then remove and set aside.
  4. In the same pan, sauté onion and bell peppers until softened.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Deglaze with red wine if using, simmering for 2 minutes.
  7. Stir in crushed tomatoes, tomato sauce, chicken broth, oregano, basil, and thyme.
  8. Return chicken to the pan, nestling into the sauce.
  9. Cover and simmer on low heat for 35–40 minutes until chicken is tender and cooked through.
  10. Add olives and simmer uncovered for 5 minutes.
  11. Garnish with fresh parsley and serve.

Notes

  • Serve with pasta, rice, or crusty bread.
  • Bone-in chicken gives the best flavor.
  • Tastes even better the next day.
