Description
Classic Italian Chicken Cacciatore featuring tender chicken braised in a rustic tomato sauce with onions, bell peppers, garlic, herbs, and olives for a hearty, comforting meal.
Ingredients
- 1 kg chicken thighs or drumsticks, skin-on
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup crushed tomatoes
- 1/2 cup tomato sauce
- 1/2 cup chicken broth
- 1/2 cup dry red wine (optional)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- 1/4 cup black or green olives, sliced
- 2 tbsp fresh parsley, chopped
Instructions
- Season chicken with salt and black pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Sear chicken on both sides until golden brown, then remove and set aside.
- In the same pan, sauté onion and bell peppers until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Deglaze with red wine if using, simmering for 2 minutes.
- Stir in crushed tomatoes, tomato sauce, chicken broth, oregano, basil, and thyme.
- Return chicken to the pan, nestling into the sauce.
- Cover and simmer on low heat for 35–40 minutes until chicken is tender and cooked through.
- Add olives and simmer uncovered for 5 minutes.
- Garnish with fresh parsley and serve.
Notes
- Serve with pasta, rice, or crusty bread.
- Bone-in chicken gives the best flavor.
- Tastes even better the next day.
