Ingredients
- 1 lb ground beef
- 1/3 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken or beef broth
- 1 cup small pasta (orzo or ditalini)
- 1 teaspoon dried Italian seasoning
- 2 tablespoons fresh parsley, chopped
Instructions
- In a bowl, mix ground beef, breadcrumbs, egg, garlic, Parmesan, salt, and black pepper.
- Form mixture into small meatballs and set aside.
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté for 4–5 minutes until softened.
- Pour in the broth and bring to a gentle boil.
- Add meatballs carefully to the pot.
- Stir in Italian seasoning and reduce heat to simmer for 10 minutes.
- Add pasta and cook for another 8–10 minutes until pasta and meatballs are cooked through.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute ground turkey for a lighter version.
- Add spinach or kale during the last few minutes for extra nutrition.
- Soup thickens as it sits; add more broth if reheating.
