Description

Meatball Soup is a hearty and comforting dish featuring tender seasoned meatballs simmered in a flavorful broth with vegetables and pasta, perfect for a warming family meal.


Ingredients

  • 1 lb ground beef
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken or beef broth
  • 1 cup small pasta (orzo or ditalini)
  • 1 teaspoon dried Italian seasoning
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. In a bowl, mix ground beef, breadcrumbs, egg, garlic, Parmesan, salt, and black pepper.
  2. Form mixture into small meatballs and set aside.
  3. Heat olive oil in a large pot over medium heat.
  4. Add onion, carrots, and celery; sauté for 4–5 minutes until softened.
  5. Pour in the broth and bring to a gentle boil.
  6. Add meatballs carefully to the pot.
  7. Stir in Italian seasoning and reduce heat to simmer for 10 minutes.
  8. Add pasta and cook for another 8–10 minutes until pasta and meatballs are cooked through.
  9. Garnish with fresh parsley and serve hot.

Notes

  • You can substitute ground turkey for a lighter version.
  • Add spinach or kale during the last few minutes for extra nutrition.
  • Soup thickens as it sits; add more broth if reheating.
