Ingredients
- 2 sandwich rolls or ciabatta buns
- 4 large eggs
- 1/4 cup milk
- 1/2 cup fresh spinach
- 1/3 cup crumbled feta cheese
- 1/4 cup roasted red peppers, sliced
- 2 tbsp sliced black or kalamata olives
- 1 tbsp olive oil
- 1/2 tsp dried oregano
- Salt and black pepper to taste
Instructions
- Whisk eggs with milk, salt, pepper, and oregano.
- Heat olive oil in a skillet over medium heat.
- Add spinach and sauté briefly until wilted.
- Pour in egg mixture and cook gently, stirring, until softly scrambled.
- Stir in feta cheese and remove from heat.
- Toast sandwich rolls lightly.
- Layer scrambled eggs onto the bottom half of each roll.
- Top with roasted red peppers and olives.
- Close sandwich and serve warm.
