Description

Ingredients

  • 2 sandwich rolls or ciabatta buns
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup fresh spinach
  • 1/3 cup crumbled feta cheese
  • 1/4 cup roasted red peppers, sliced
  • 2 tbsp sliced black or kalamata olives
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste


Instructions

  1. Whisk eggs with milk, salt, pepper, and oregano.
  2. Heat olive oil in a skillet over medium heat.
  3. Add spinach and sauté briefly until wilted.
  4. Pour in egg mixture and cook gently, stirring, until softly scrambled.
  5. Stir in feta cheese and remove from heat.
  6. Toast sandwich rolls lightly.
  7. Layer scrambled eggs onto the bottom half of each roll.
  8. Top with roasted red peppers and olives.
  9. Close sandwich and serve warm.
