Description

A rich and creamy potato dish loaded with melted cheese, crispy bacon, and a flavorful ranch dressing mix, baked to perfection for a hearty side dish.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Boil the diced potatoes in salted water until tender, about 10-12 minutes. Drain and set aside.
  3. In a large bowl, mix together sour cream, mayonnaise, ranch seasoning mix, and olive oil until smooth.
  4. Add the boiled potatoes to the bowl and gently fold in the ranch mixture until the potatoes are evenly coated.
  5. Transfer the mixture to the prepared baking dish and spread it out evenly.
  6. Top with shredded cheddar cheese and crumbled bacon.
  7. Bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is slightly golden.
  8. Remove from the oven and garnish with chopped green onions if desired.
