Ingredients
- 4 large russet potatoes, peeled and diced
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 packet ranch seasoning mix
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Boil the diced potatoes in salted water until tender, about 10-12 minutes. Drain and set aside.
- In a large bowl, mix together sour cream, mayonnaise, ranch seasoning mix, and olive oil until smooth.
- Add the boiled potatoes to the bowl and gently fold in the ranch mixture until the potatoes are evenly coated.
- Transfer the mixture to the prepared baking dish and spread it out evenly.
- Top with shredded cheddar cheese and crumbled bacon.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is slightly golden.
- Remove from the oven and garnish with chopped green onions if desired.
- Serve hot and enjoy!
