Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 cup chopped onions
  • 3 cloves garlic, minced
  • 2 fresh jalapeños, finely diced (seeds removed for less heat)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup fresh cilantro, chopped (optional for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt, pepper, paprika, and garlic powder. Sear the chicken in the skillet for 6–7 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, add onions and sauté until softened. Add garlic and jalapeños, cooking for 1–2 minutes until fragrant.
  4. Pour in heavy cream and stir in cream cheese until smooth. Bring to a gentle simmer and cook for 3–4 minutes.
  5. Stir in shredded cheddar cheese until melted and the sauce is creamy.
  6. Return the chicken to the skillet, spooning sauce over the top. Let the chicken cook in the sauce for an additional 5 minutes to absorb the flavors.
