Ingredients

  • 2 cups broccoli florets
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into chunks
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • 1 tbsp lemon juice (optional)


Instructions

  1. Preheat oven to 200°C (400°F).
  2. Place all vegetables in a large bowl.
  3. Add olive oil, garlic, oregano, thyme, salt, and pepper. Toss well to coat.
  4. Spread vegetables evenly on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through, until tender and slightly caramelized.
  6. Drizzle with lemon juice if desired.
  7. Serve warm.
