Ingredients
- 2 cups broccoli florets
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into chunks
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp thyme
- Salt and pepper to taste
- 1 tbsp lemon juice (optional)
Instructions
- Preheat oven to 200°C (400°F).
- Place all vegetables in a large bowl.
- Add olive oil, garlic, oregano, thyme, salt, and pepper. Toss well to coat.
- Spread vegetables evenly on a baking sheet in a single layer.
- Roast for 25-30 minutes, stirring halfway through, until tender and slightly caramelized.
- Drizzle with lemon juice if desired.
- Serve warm.
