Description

Flavorful Peruvian-style chicken marinated with spices and roasted until juicy, served with a creamy, zesty green sauce made from herbs, chili, and lime.


Ingredients

  • 1 kg chicken thighs or drumsticks
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup fresh cilantro leaves
  • 2 jalapeños, seeds removed
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp white vinegar
  • 1 tbsp lime juice (for sauce)


Instructions

  1. In a bowl, mix olive oil, soy sauce, lime juice, garlic, cumin, paprika, black pepper, and salt.
  2. Coat the chicken evenly with the marinade and refrigerate for at least 1 hour.
  3. Preheat oven to 200°C (400°F).
  4. Place chicken on a baking tray and roast for 40–45 minutes until golden and cooked through.
  5. While chicken cooks, prepare the green sauce.
  6. Blend cilantro, jalapeños, mayonnaise, sour cream, vinegar, and lime juice until smooth.
  7. Taste and adjust seasoning if needed.
  8. Serve roasted chicken hot with green sauce on the side.

Notes

  • You can grill the chicken instead of roasting for smoky flavor.
  • Adjust jalapeños for desired spice level.
  • Green sauce can be made ahead and refrigerated for up to 3 days.
