Description
Flavorful Peruvian-style chicken marinated with spices and roasted until juicy, served with a creamy, zesty green sauce made from herbs, chili, and lime.
Ingredients
- 1 kg chicken thighs or drumsticks
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 cup fresh cilantro leaves
- 2 jalapeños, seeds removed
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp white vinegar
- 1 tbsp lime juice (for sauce)
Instructions
- In a bowl, mix olive oil, soy sauce, lime juice, garlic, cumin, paprika, black pepper, and salt.
- Coat the chicken evenly with the marinade and refrigerate for at least 1 hour.
- Preheat oven to 200°C (400°F).
- Place chicken on a baking tray and roast for 40–45 minutes until golden and cooked through.
- While chicken cooks, prepare the green sauce.
- Blend cilantro, jalapeños, mayonnaise, sour cream, vinegar, and lime juice until smooth.
- Taste and adjust seasoning if needed.
- Serve roasted chicken hot with green sauce on the side.
Notes
- You can grill the chicken instead of roasting for smoky flavor.
- Adjust jalapeños for desired spice level.
- Green sauce can be made ahead and refrigerated for up to 3 days.
