Description

Philadelphia Cheesecake Bars are rich, creamy dessert bars made with smooth cream cheese filling over a buttery graham cracker crust. They’re easy to slice, serve, and perfect for parties or make-ahead desserts.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for crust)
  • 16 oz Philadelphia cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat the oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until combined.
  3. Press the mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 10 minutes, then set aside to cool slightly.
  5. In a large bowl, beat the cream cheese until smooth.
  6. Add remaining sugar and mix until creamy.
  7. Beat in eggs one at a time, then add vanilla extract, sour cream, and flour.
  8. Pour the cheesecake mixture over the crust and smooth the top.
  9. Bake for 35–40 minutes until the center is set.
  10. Cool completely, then refrigerate for at least 2 hours before slicing into bars.

Notes

  • Use full-fat cream cheese for best texture.
  • Do not overmix after adding eggs to avoid cracks.
  • Chill thoroughly before cutting for clean slices.
