Description
A flavorful one-pan Pineapple Chicken and Rice dish combining tender chicken, sweet pineapple, and savory-seasoned rice for a balanced sweet-and-savory meal.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breast, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/4 cup pineapple juice
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 green onions, sliced (optional)
Instructions
- Heat olive oil in a large skillet or deep pan over medium heat.
- Season chicken with salt, pepper, garlic powder, and paprika. Add to the pan and cook until lightly browned. Remove and set aside.
- In the same pan, sauté onion and bell pepper until softened. Add garlic and cook for 30 seconds.
- Stir in rice and toast for 1–2 minutes.
- Add chicken broth, pineapple juice, soy sauce, and brown sugar. Stir well.
- Return chicken to the pan and add pineapple chunks.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
- Remove from heat and let rest for 5 minutes. Fluff with a fork and garnish with green onions if desired.
Notes
- Use jasmine rice for extra aroma if desired.
- Canned pineapple should be well-drained to avoid excess sweetness.
- Add chili flakes for a spicy kick.
