Description

A flavorful one-pan Pineapple Chicken and Rice dish combining tender chicken, sweet pineapple, and savory-seasoned rice for a balanced sweet-and-savory meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice
  • 3 cups chicken broth
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/4 cup pineapple juice
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 green onions, sliced (optional)


Instructions

  1. Heat olive oil in a large skillet or deep pan over medium heat.
  2. Season chicken with salt, pepper, garlic powder, and paprika. Add to the pan and cook until lightly browned. Remove and set aside.
  3. In the same pan, sauté onion and bell pepper until softened. Add garlic and cook for 30 seconds.
  4. Stir in rice and toast for 1–2 minutes.
  5. Add chicken broth, pineapple juice, soy sauce, and brown sugar. Stir well.
  6. Return chicken to the pan and add pineapple chunks.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  8. Remove from heat and let rest for 5 minutes. Fluff with a fork and garnish with green onions if desired.

Notes

  • Use jasmine rice for extra aroma if desired.
  • Canned pineapple should be well-drained to avoid excess sweetness.
  • Add chili flakes for a spicy kick.
