Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 3/4 cup semi-sweet chocolate chunks or chips
  • 1/4 cup chopped pistachios (optional, for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan and line with parchment paper.
  2. In a bowl, whisk together flour, pistachio pudding mix, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Mix in sour cream until combined.
  6. Alternate adding dry ingredients and milk to the wet mixture, beginning and ending with dry ingredients. Mix until just combined.
  7. Fold in chocolate chunks.
  8. Spread batter evenly into prepared pan and sprinkle chopped pistachios on top if using.
  9. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool completely before slicing and serving.
