Ingredients
- 1 1/2 cups all-purpose flour
- 1 (3.4 oz) box instant pistachio pudding mix
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/2 cup whole milk
- 3/4 cup semi-sweet chocolate chunks or chips
- 1/4 cup chopped pistachios (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan and line with parchment paper.
- In a bowl, whisk together flour, pistachio pudding mix, baking powder, baking soda, and salt.
- In a separate large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Mix in sour cream until combined.
- Alternate adding dry ingredients and milk to the wet mixture, beginning and ending with dry ingredients. Mix until just combined.
- Fold in chocolate chunks.
- Spread batter evenly into prepared pan and sprinkle chopped pistachios on top if using.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely before slicing and serving.
Notes
- Do not overmix the batter to keep the cake tender.
- Use dark chocolate for a richer contrast.
