Description

Crispy pistachio-crusted Camembert bites baked until melty inside and finished with a sweet-tart raspberry honey glaze for an elegant appetizer or party snack.


Ingredients

  • 8 oz (225 g) Camembert cheese, cut into bite-sized cubes
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup breadcrumbs
  • 2 large eggs, beaten
  • 2 tbsp all-purpose flour
  • 1/3 cup raspberry preserves
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • Cooking spray or olive oil spray


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place flour, beaten eggs, and a mixture of pistachios and breadcrumbs into separate bowls.
  3. Dredge each Camembert cube in flour, then dip into egg, and coat well with the pistachio breadcrumb mixture.
  4. Arrange coated cheese bites on the baking sheet and lightly spray with oil.
  5. Bake for 8–10 minutes until golden and just softened inside.
  6. Meanwhile, combine raspberry preserves, honey, and lemon juice in a small saucepan.
  7. Heat gently over low heat, stirring until smooth and slightly thinned.
  8. Remove Camembert bites from oven and drizzle with raspberry honey glaze.
  9. Serve warm.

Notes

  • Chill coated cheese bites for 15 minutes before baking to prevent excessive melting.
  • Can also be shallow-fried for extra crispiness.
  • Serve with toothpicks for easy entertaining.
