Description

A fun and flavorful cold pasta salad inspired by classic pizza toppings, tossed with a zesty Italian dressing and perfect for potlucks or quick meals.


Ingredients

  • 12 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella pearls or cubed mozzarella
  • 1/2 cup sliced pepperoni (halal)
  • 1/4 cup black olives, sliced
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup Italian dressing
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder


Instructions

  1. Cook pasta according to package instructions until al dente.
  2. Drain pasta and rinse under cold water to cool completely.
  3. Add cooled pasta to a large mixing bowl.
  4. Add cherry tomatoes, mozzarella, pepperoni, olives, bell pepper, and red onion.
  5. Pour Italian dressing over the salad.
  6. Sprinkle with oregano and garlic powder.
  7. Toss well until everything is evenly coated.
  8. Cover and refrigerate for at least 30 minutes before serving.

Notes

  • Add cooked sausage or salami for extra protein.
