Description
Reuben Bowls are a low-carb twist on the classic sandwich, featuring seasoned corned beef, tangy sauerkraut, Swiss cheese, and creamy dressing served in a hearty bowl instead of bread.
Ingredients
- 450 g cooked corned beef, sliced or chopped
- 2 cups sauerkraut, drained
- 1 cup shredded Swiss cheese
- 1 tbsp butter or olive oil
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp sweet pickle relish
- 1 tsp Dijon mustard
- 2 cups shredded lettuce (optional base)
Instructions
- In a small bowl, whisk mayonnaise, ketchup, pickle relish, and Dijon mustard to make the dressing. Set aside.
- Heat butter or olive oil in a skillet over medium heat.
- Add corned beef and season with black pepper and garlic powder.
- Cook for 3–4 minutes until heated through and slightly crispy.
- Add drained sauerkraut to the skillet and cook for 2 minutes.
- Divide shredded lettuce among serving bowls if using.
- Top with hot corned beef and sauerkraut mixture.
- Sprinkle Swiss cheese over the top.
- Drizzle generously with prepared dressing.
- Serve immediately.
Notes
- Broil briefly to melt cheese if desired.
- Use store-bought Thousand Island dressing for convenience.
