Description

Reuben Bowls are a low-carb twist on the classic sandwich, featuring seasoned corned beef, tangy sauerkraut, Swiss cheese, and creamy dressing served in a hearty bowl instead of bread.

Ingredients

  • 450 g cooked corned beef, sliced or chopped
  • 2 cups sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 1 tbsp butter or olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp Dijon mustard
  • 2 cups shredded lettuce (optional base)

Instructions

  1. In a small bowl, whisk mayonnaise, ketchup, pickle relish, and Dijon mustard to make the dressing. Set aside.
  2. Heat butter or olive oil in a skillet over medium heat.
  3. Add corned beef and season with black pepper and garlic powder.
  4. Cook for 3–4 minutes until heated through and slightly crispy.
  5. Add drained sauerkraut to the skillet and cook for 2 minutes.
  6. Divide shredded lettuce among serving bowls if using.
  7. Top with hot corned beef and sauerkraut mixture.
  8. Sprinkle Swiss cheese over the top.
  9. Drizzle generously with prepared dressing.
  10. Serve immediately.
