Description
Delicate no-bake ricotta pistachio honey bites that are lightly sweet, creamy, and nutty, perfect as an elegant dessert or snack.
Ingredients
- 1 cup whole-milk ricotta cheese
- 1/4 cup honey
- 1/2 tsp vanilla extract
- 1/3 cup pistachios, finely chopped
- 1/4 cup almond flour
- 1 tbsp lemon zest
- Pinch of salt
- Extra chopped pistachios, for coating
Instructions
- Line a tray with parchment paper and set aside.
- In a bowl, mix ricotta cheese, honey, vanilla extract, lemon zest, and salt until smooth.
- Fold in almond flour and chopped pistachios until a thick mixture forms.
- Refrigerate the mixture for 20–30 minutes to firm up.
- Scoop small portions and roll into bite-sized balls.
- Roll each bite in extra chopped pistachios to coat.
- Chill for another 15 minutes before serving.
Notes
- For a firmer texture, strain ricotta for 30 minutes before using.
- You can substitute almond flour with crushed biscuits or oat flour.
- Drizzle extra honey on top before serving for added sweetness.
