Description

Delicate no-bake ricotta pistachio honey bites that are lightly sweet, creamy, and nutty, perfect as an elegant dessert or snack.


Ingredients

  • 1 cup whole-milk ricotta cheese
  • 1/4 cup honey
  • 1/2 tsp vanilla extract
  • 1/3 cup pistachios, finely chopped
  • 1/4 cup almond flour
  • 1 tbsp lemon zest
  • Pinch of salt
  • Extra chopped pistachios, for coating


Instructions

  1. Line a tray with parchment paper and set aside.
  2. In a bowl, mix ricotta cheese, honey, vanilla extract, lemon zest, and salt until smooth.
  3. Fold in almond flour and chopped pistachios until a thick mixture forms.
  4. Refrigerate the mixture for 20–30 minutes to firm up.
  5. Scoop small portions and roll into bite-sized balls.
  6. Roll each bite in extra chopped pistachios to coat.
  7. Chill for another 15 minutes before serving.

Notes

  • For a firmer texture, strain ricotta for 30 minutes before using.
  • You can substitute almond flour with crushed biscuits or oat flour.
  • Drizzle extra honey on top before serving for added sweetness.
